Chole Bhature .

Chole bhature, also spelled chole bhatura, is a popular dish originating from the Indian subcontinent, specifically the Punjab region. This dish consists of two main components: "chole," which are spicy chickpeas, and "bhature," which are deep-fried leavened bread made from maida (refined wheat flour). The dish has its roots in Punjab, a region that spans both India and Pakistan. Punjab is known for its rich and diverse culinary traditions, heavily influenced by the agricultural lifestyle and the region's historical interactions with various cultures.

Chole (Chickpea Curry)

Ingredients :

•2 cups chickpeas (soaked overnight)
•2 large onions, finely chopped
•2 tomatoes, finely chopped
•2 green chilies, slit
•1 tablespoon ginger-garlic paste
•2 teaspoons chole masala (or garam masala)
•1 teaspoon turmeric powder
•1 teaspoon cumin seeds
•1 teaspoon red chili powder
•1 teaspoon coriander powder
•1 teaspoon amchur (dry mango powder)
•2 tablespoons oil
•Salt to taste
•Fresh coriander leaves for garnish

Instructions :

1. Cook Chickpeas: Drain the soaked chickpeas and pressure cook them with water and a little salt for about 20 minutes, until they are soft. Set aside.

2. Prepare Masala: Heat oil in a pan. Add cumin seeds and let them splutter. Add chopped onions and sauté until golden brown. Add ginger-garlic paste and green chilies, and sauté for a minute.

3. Cook Tomatoes: Add chopped tomatoes and cook until they turn mushy and oil starts to separate.

4. Add Spices: Add turmeric powder, red chili powder, coriander powder, and chole masala. Mix well and cook for a few minutes.

5. Combine Chickpeas and Masala: Add the cooked chickpeas along with some of the water they were cooked in. Mix well and let it simmer for 15-20 minutes on low heat.

6. Finish and Garnish: Add amchur powder and salt to taste. Stir well and let it cook for another 5 minutes. Garnish with fresh coriander leaves before serving.

Bhature (Fried Bread)

Ingredients :

•2 cups all-purpose flour (maida)
•2 tablespoons semolina (sooji)
•2 tablespoons yogurt
•1 teaspoon sugar
•1 teaspoon salt
•1/2 teaspoon baking powder
•1/4 teaspoon baking soda
•Water (as needed for kneading)
•Oil (for deep frying)

Instructions :

1. Prepare Dough: In a large mixing bowl, combine all-purpose flour, semolina, sugar, salt, baking powder, and baking soda. Add yogurt and mix well.

2. Knead Dough: Gradually add water and knead into a soft, smooth dough. Cover with a damp cloth and let it rest for at least 1 hour.

3. Shape Bhature: Divide the dough into small balls. Roll each ball into a round shape, about 5-6 inches in diameter.

4. Fry Bhature: Heat oil in a deep frying pan. When the oil is hot, carefully slide in the rolled dough. Press gently with a slotted spoon to help it puff up. Fry until both sides are golden brown. Remove and drain on paper towels.

Serving :

Serve the hot Chole with freshly fried Bhature. Garnish with sliced onions, green chilies, and a wedge of lemon.
