Dosa - A South Indian dish

History of Dosa.

The history of dosa (or dhosa) is rich and intertwined with the culinary traditions of South India. The dosa is believed to have originated in the southern part of India, particularly in the state of Tamil Nadu. The earliest written mention of dosa is in the 6th century, attributed to Chalukya King Somesvara III in Tamil literature. Around this period, the dosa was thinner and crispier, much like the contemporary version. As South Indian cuisine spread to other parts of India and beyond, the dosa evolved with regional variations. The original rice and urad dal batter base remained, but the fillings and accompaniments diversified.
Variants: In Karnataka, for example, the masala dosa, which is filled with a spiced potato mixture, became very popular. Other regions adapted the dosa with different fillings and accompaniments, such as chutneys and sambar.

Here's the menu for the dish.

Ingredients :

For the Dosa Batter.

•2 cups parboiled rice
•1/2 cup urad dal (split black gram)
•1/2 teaspoon fenugreek seeds (methi)
•Salt to taste
•Water for soaking and grinding

For Cooking the Dosa:

•Ghee or oil for cooking

Instructions :

Preparing the Batter.

1. Soak the Ingredients:

•Rinse the rice and urad dal separately a few times in water.

•Soak the rice and fenugreek seeds together in water for about 4-6 hours.

•Soak the urad dal separately in water for about 4-6 hours.

2. Grinding the Batter:

•Drain the soaked urad dal and fenugreek seeds, and add them to a grinder or a high-speed blender.

•Add some water and grind until you get a smooth and fluffy batter.

•Drain the soaked rice and add it to the grinder. Grind until you get a smooth but slightly grainy batter, adding water as needed.

•Mix both batters in a large bowl. The consistency should be slightly thick but flowing.

3. Fermentation:

•Add salt to taste and mix well.

•Cover the bowl and let the batter ferment in a warm place for about 8-12 hours or overnight. 

•The batter should rise and become bubbly.

Making the Dosa.

1. Prepare the Pan:

•Heat a non-stick or cast-iron skillet on medium heat. Ensure the pan is evenly heated.

•Lightly grease the pan with a few drops of oil or ghee. Wipe off the excess with a paper towel.

2. Pouring the Batter:

•Pour a ladleful of the fermented batter in the center of the pan.

•Using the back of the ladle, spread the batter in a circular motion from the center outward, forming a thin layer.

3. Cooking the Dosa:

•Drizzle a few drops of oil or ghee around the edges of the dosa.

•Cook until the edges start to lift and the bottom turns golden brown. This usually takes about 1-2 minutes.

•If you prefer, you can flip the dosa and cook the other side for a few seconds.

4. Serving:

•Fold the dosa in half or roll it.
Serve hot with sambar, coconut chutney, or any other chutney of your choice.
